Il Molino di Raffadali

With the expression “ancient Sicilian grains”, we refer to all those varieties of wheat that have existed for over a century and that were cultivated before the spread of the new grains.

To date, there are 52 varieties of wheat, most of which are hard and semi-hard, and few are tender.

Some of the ancient varieties, now available in our mill and milled both with stone and cylinders, are: Timilia, Russello, Perciasacchi, Margherito, Scorsonera, Maiorca.

In our small way, we try, with passion and perseverance, to increase the offer of native varieties for a critical recovery of the flavors and recipes of the past.
